SUMMARY

The Sous Chef is responsible for planning and managing food preparation in the kitchen, serving as the assistant to the Chef and second in command. This role oversees daily kitchen operations, including ordering, inventory control, training new staff, and maintaining high standards of food quality and safety. The Sous Chef ensures proper food handling, storage, and sanitation while supporting and supervising the culinary team. In the Chef’s absence, the Sous Chef leads all kitchen activities, ensuring smooth and efficient operations.

ESSENTIAL DUTIES AND RESPONSIBILITIES include the following. Other duties may be assigned by your direct manager. Regular and predictable attendance is an essential function of the job.

  • Able to perform the duties of the Chef in their absence.
  • Assist the Chef with managing the day-to-day operations.
  • Assists Chef in training new line cooks, prep cooks, and dishwashers.
  • Monitors the Kitchen Staff, including, but not limited to, enforcing service standards, uniform compliance, company policies, and ServeSafe requirements.
  • Ensure a sanitary work environment and that all local codes and policies regarding proper storage, handling, and serving of food are being followed.
  • Ensure that food storage areas are clean and properly organized at all times. As requested, inspect food storage areas, utility/janitorial closets for upkeep and supply control.
  • Manages production areas for efficient daily operation.
  • Reads the menu to estimate food requirements and orders food from supplier or procures food from storage.
  • Measures and mixes ingredients according to recipe to prepare soups, salads, gravies, desserts, sauces, and casseroles.
  • Bakes, roasts, broils, and steams meats, fish, vegetables, and other foods.
  • Adds seasoning to foods during mixing or cooking.
  • Observes and tests foods being cooked by tasting, smelling, and piercing with fork to determine degree of doneness.
  • Carves meats, portions food on serving plates, adds gravies and sauces, and garnishes servings to fill orders.
  • Displays knowledge and follows all procedures in sanitation and sanitary food handling.
  • Keeps work area clean and organized using soap and sanitizing agents.
  • Washes, peels, cuts, and shreds vegetables and fruits to prepare them for use.
  • Butchers chickens, fish, and shellfish.
  • Bakes bread, rolls, cakes, and pastry.
  • Loads or unloads trucks picking up or delivering food and/or supplies.
  • All other reasonable and related duties assigned by the Chef
  • Dress appropriately per the Company’s standards outlined in the Employee Handbook.
  • Attend periodic staff meetings, in-service training, and mandatory meetings as required.
  • Observe Residents’ Rights, as posted within the facility, to include any updates thereto.
  • Mandated reporting – if you suspect any verbal, physical, emotional, financial, or neglectful treatment toward a resident or staff member, report it to your supervisor immediately.
  • In Emergencies, assist residents according to the Emergency Plan of the facility.

SUPERVISORY RESPONSIBILITIES

  • Lead culinary team in all kitchen operations alongside the chef and in the Chef’s absence
  • Assist the Chef with Ordering Products and Scheduling staff

Qualifications

EDUCATION and/or EXPERIENCE

  • High school diploma or GED is preferred, or equivalent experience.
  • Formal culinary training or a degree in culinary arts is preferred.
  • Must have at least two (2) years of prior culinary experience.
  • Supervisor experience preferred.
  • According to Title 22 requirements, employee must be at least eighteen (18) years of age.

Communication Skills

  • Ability to communicate clearly and effectively.
  • Interact well with our Carlton Family – residents, family members, all staff members, future residents.
  • Must have basic knowledge of food preparation, service standards and resident relations and etiquette.
  • Ability to calculate units of weight and measure, both liquid and dry, as required by recipes.
  • Ability to use common sense and understanding to carry out instructions furnished in the written, oral or diagram form.

CERTIFICATES, LICENSES, REGISTRATIONS

  • Serve Safe certification is preferred.
  • Current First Aid Certification (obtained through community)
  • DOJ and FBI fingerprint clearance must be completed prior to working in community (obtained through community)
  • Health screening and negative TB test, must be less than six (6) months old. (obtained through community)
  • Must be authorized to work in the United States of America and provide sufficient work authorization documentation(s)

Compensation may vary outside of this range depending on a number of factors, including a candidate’s qualifications, skills, competencies and experience, and location. Base pay is one part of the total package that is provided to compensate and recognize employees for their work, and this role may be eligible for additional discretionary bonuses/incentives.
