About The Role
Spiegelworld is looking for an Executive Chef to join the team at Superfrico at the Cosmopolitan in Las Vegas. The Executive Chef will be responsible for delivering cuisine that exceeds the guests’ expectations and provide strong leadership while living our vision and values. This position will oversee all activity in the kitchen, train personnel, plan menus, oversee product purchasing and manage culinary budgets. The ideal candidate will thrive in a creative environment and embrace the challenges of a shared space with unique performances. This role is responsible for implementing the dining vision and is ultimately accountable for the restaurant’s culinary success. The position reports to the Restaurant General Manager. The salary range for this position is $105,000 - $110,000/ year.
What You’ll Do
- Responsible for the overall quality and profitability of the restaurant’s culinary program.
- Working closely with Spiegelworld and resort partners to position the restaurant to meet or exceed budgeted goals.
- Controlling labor and operating expenses through effective scheduling, budgeting, purchasing decisions, and inventory.
- Participate in departmental and venue meetings, facilitating the flow of pertinent information from management to employees.
- Performing pre-shift line up and post-service checks; ensuring kitchen staff are aware of daily specials, new preparations, and VIP guests.
- Overseeing all kitchen operations for restaurant and theater, ensuring an integrated experience, and actively participating in service and daily operations.
- Always maintains a safe and professional work environment.
- Designing new recipes, planning menus, and selecting plate presentations.
- Ensuring consistent execution of all menus and recipes, training and accountability of the culinary team.
- Appropriately engaging with guests during service and taking ownership of guest feedback on dishes.
- Writing and coordinating the creation of SOPs for the kitchen activities to ensure all standards are being met and train staff appropriately.
- Selecting, training, evaluating, leading, motivating, and coaching all employees to ensure that established cultural and core standards are met.
- Actively developing their F&B knowledge and instilling excitement and passion for food, beverage, and service in their team. Conducting regular education sessions for staff on products and techniques.
- Maintains professional grooming and appearance and acts as a role model according to established grooming and appearance policy.
- Maintains knowledge of all health department regulations, policies and procedures and oversees daily operations to make sure all conditions and standards are met with 100% accuracy.
- Maintains knowledge and understanding of the CBA and operates in accordance with union representation to create a cohesive working environment.
- Actively engage in our antiracist commitment and internal practices by participating in offered learnings, engaging in conversations around Equity, Diversity, Inclusion, and Accessibility, and helping us maintain a safe and welcoming workspace.
- May be required to participate in marketing events, charitable events, TV appearances, photoshoots, and other publicity events.
- Other duties as assigned by your manager.

What You Bring
- High school diploma or equivalent required. Culinary degree preferred.
- Prior experience as an Executive Chef in a high volume and resort environment.
- Experience with Italian cuisine is highly preferred.
- Experience with menu engineering, creative development, and execution of new menus.
- Exceptional interpersonal and communication skills.
- Experience planning menus for and execution of Banquet Event Orders.
- Experience managing under a collective bargaining agreement.
- Proficiency in word processing and spreadsheet software.
- Advanced knowledge of restaurant financials and analytics.
- Successful drug test, background check clearance prior to hire (and reference checks for Manager level and above positions) /(drug test for Cosmopolitan)
- Ability to work evenings, weekends, and holidays as scheduled/needed.
- Must possess a Food Handler Safety Training Card
- Must have valid work authorization for the US.
