How You’ll Contribute

As Brewery General Manager (Head Brewer) of our Temple Brewery, you’ll lead every aspect of brewery operations to consistently produce the high-quality, beverages our guests know and love. This role blends hands-on <span class="highlight-skill">brewing</span> and packaging expertise with <span class="highlight-skill">leadership</span> of the team, production schedule, inventory, labor, and budget, while building a culture of safety, accountability, and continuous improvement.

The Craft: Lead and support every stage of production from <span class="highlight-skill">brewing</span> and <span class="highlight-skill">yeast management</span> to centrifuging or DE <span class="highlight-skill">filtration</span>, soda production, and packaging finished beer in kegs, cans, and bottles.

The <span class="highlight-skill">Leadership</span>: Lead, coach, schedule, and develop the Lead Brewer and Assistant Brewers while creating a culture of accountability, <span class="highlight-skill">teamwork</span>, safety, and continuous improvement.

The Quality: Own BJ’s high standard across every beverage, piece of equipment, and area of the facility through strong sensory evaluation, <span class="highlight-skill">quality control</span>, <span class="highlight-skill">sanitation</span>, and disciplined production practices.

The Operations: Deliver the production schedule through accurate forecasting, procurement, <span class="highlight-skill">inventory management</span>, labor planning, budget oversight, and operational excellence in partnership with the VP of Brewery Operations.

The Standards: Maintain complete production and inventory documentation while ensuring the brewery, equipment, and facility remain clean, organized, sanitized, and ready for production.

The Safety: Lead strict compliance with safety, food safety, chemical-handling, regulatory, and OSHA requirements while maintaining a drug- and alcohol-free workplace. Authorized quality tastings are conducted only under established company protocols.

Responsibilities:

What You’ll Do

Provide end-to-end <span class="highlight-skill">leadership</span> of all brewery operations including <span class="highlight-skill">brewing</span> all recipes to specification and complete accurate production records.

Lead hands-on <span class="highlight-skill">brewing</span>, centrifuging or DE <span class="highlight-skill">filtration</span>, <span class="highlight-skill">yeast management</span> and propagation, soda production, cleaning, <span class="highlight-skill">sanitation</span>, and packaging into kegs, cans, and bottles.

Manage yeast, including proper handling and propagation, and support soda production.

Receive deliveries, maintain inventory records, and help manage production in brewery systems.

Operate a forklift and brewery equipment safely and responsibly.

Clean and sanitize vessels, equipment, and brewery work areas using proper chemical-handling practices.

Coach Assistant Brewers and reinforce consistent, efficient brewery practices.

Maintain BJ’s standard for quality, safety, cleanliness, and OSHA compliance.

Share your beer and <span class="highlight-skill">brewing</span> knowledge with restaurant guests and represent BJ’s at beer events.

Key Accountabilities: will be responsible for tracking the following but not limited to

· Ensure all brewer/cellar employees and procedures meet Pelican Brewing Company/State/Federal <span class="highlight-skill">safety standards</span>.

· Responsible for knowing and managing all aspects of the brewing process. This includes wort production, cellaring, clarification and associated maintenance.

· Understanding and management of other key elements including utilities, raw materials, safety, personnel, training and maintenance.

· Works closely with other department managers to drive the production schedule to meet a Just In Time production model.

· Manage/conduct brewery audits to ensure consistency, repeatability, and quality of process and product adhere to Pelican Brewing standards.

· Work cooperatively with QC department to monitor the health of the brewery via fermentation performance, sensory panels, and analytics.

· Participates in the product development process helping to scale pilot batches to production model.

· Develop reports on brewing execution, quality and exceptions.? Put systems in place to improve process controls.

· Keep production systems and inventories updated and free of errors for accurate reporting.

· Responsible for the cleanliness and sanitation of the brew house and cellars to ensure all work areas comply with company standards.

· Provide coverage for staff needing breaks/cover shifts if needed. Must be willing to gain skills to understand and execute in-house processes.

· Recruit, supervise and review performance of direct reports and develop staff professionally and technically to meet goals.?

· Manage staff scheduling to ensure weekly production needs are met.

Staying current with technical literature and information about sensory evaluation.
